This is the perfect recipe for those days when you don't feel like cooking and wish dinner was already done. I found this slow cooker butter chicken recipe on a fellow home-chef foodie blog called Damn Delicious and immediately gave it a go. This recipe is one where you make the sauce from scratch so there are no yucky packety flavours. Make your usual rice to serve with it and you've got a meal of comforting fresh Indian cuisine the whole family will enjoy.
Slow Cooker Butter Chicken Prep time: 20min Cooking time: 4hrs Serves: 6 Difficulty: Anyone can make this Ingredients
1kg chicken fillets
1/2 onion
3 cloves of garlic
1 tbsp of finely grated ginger
1/2 cup cream
1 1/2 tsp brown sugar
2 tbsp of freshly squeezed lime
Sauce
1/2 cup of chicken stock
170gm tomato paste
2 tsp of yellow curry powder
1 tsp garam masala
1 tsp turmeric
1 tsp salt
1/2 tsp ground black pepper
Steamed rice to serve
Method
Place all the sauce ingredients into a small bowl and whisk together till well combined
2. Add the chicken, onion, garlic and ginger into your slow cooker, then pour in the sauce.
3. Cover the slow cooker pot and cook on a low heat for around 4 hours.
4. Once cooked, stir in the cream, lime juice, sugar and season with salt and pepper to taste.
Serve over freshly steamed rice
