Some might say that Daniel Wilson and the team were the godfathers, the innovators of making burgers cool again with their establishment on Smith Street in Collingwood. Their cult-like status draws queues of hungry burger fanatics and has seen the chain expand across several locations within Melbourne with talk of interstate expansions ( we live in hope!).
During my recent visit to Melbourne, I discovered the CBD store which is tucked away off Flinders Street ,Fulham Place and like a lot of Melbourne's best eats, beats and drinks it is marked with a simple neon-lit sign down an alley.
The fit out is reminiscent of an American diner with its red swivel chairs, self-serve soft drink machine, bright, bold colours and the aroma of juicy meat patties grilling in the open silver clad kitchen. It is a small space and is designed more for those after a quick bite, or take away.
So where to start with the menu? Why not start the day with a breakfast burger or for a light bite try one of the mini burgers. For the die-hard fans, the beef burgers are a must try, with their golden buttered bun, grass-fed meat patties and add-ons of fresh ingredients. Non-beef burger goers can also order chicken and vege burgers.
I have always been a fan of the original Huxtaburger, but this time I decided to mix it up a bit and try the "Theo". Constructed with double the patties, double the cheese, bacon, bbq sauce, mustard, mayo, tomato, lettuce and pickles. It's hearty and all the ingredients work well together.
More than just the burgers there are sides of fries, dipping sauces, milkshakes, desserts and for those looking to make it a real meal for grown-ups get a bottle of the Huxtabrew or Huxtabubbles.
You're not going to find freakish, heart attack in a meal style burgers here, Huxtaburger is all about using high-quality ingredients, applying restraint by keeping it simple and perfecting the basics time after time again.
